 The pineapple and coconut in my pina colada were fresh off the tree, and the rum was distilled about a half a mile down the dirt road, in a traditional sugar shack. It was poured from its moonshine container by a twenty-year-old Nicaraguan eager to practice his English. The sun had set on the tropical afternoon, and the breeze that swept across the open-air dining patio, where we sat on an over-stuffed sofa, looking out toward a horseshoe bay. Geckos chirped from the rafter high above, bats hurtled through the dusk, and somewhere in the nearby trees, howler monkeys were bedding down for the night.

It was the end of another day in paradise, although this ....

We ascended a dirt trail, crossed a 350-foot-long wood bridge, passed signs for rooms 8, 9, 10 and then climbed steps carved into a steep ridge. Fortunately, a porter carried my suitcase over his shoulders to room 14 at Morgan’s Rock, for it was the longest trek I’d ever made to a hotel room.

“It’s worth it,” said my host. “You have one of the best bungalows.”

Opening the door to my room unveiled a sweeping, 180-degree panorama of the Pacific Coast with almost no other structure in sight. Straight below were the hacienda and restaur ....
